Cheese, Egg & Spinach Boats#

A dish based on Kachapuri, a traditional Georgian cheese-filled bread, using puff pastry for a quick and filling meal.

Ingredients#

  • 320g ready-rolled puff pastry sheet
  • 200g baby spinach
  • 75g feta cheese, chopped
  • 75g light mozzarella, chopped
  • juice of 1 lemon
  • 1 tbsp dill, chopped
  • ½ tsp chilli flakes
  • 2 tbsp butter, melted
  • 3 eggs, 1 beaten
  • sesame seeds, for sprinkling
  • salt and pepper, to taste

Instructions#

1. Shape the Boats#

Cut the pastry in half lengthways, then turn in the edges of both in one small roll to create a rim. Pinch the bottom of each pastry piece hard so it creates almost a boat shape.

2. Prepare the Filling#

Wilt the spinach in a pan, then squeeze to remove the excess water. Transfer the spinach to a large bowl and mix with the feta, mozzarella, lemon juice, dill, chilli flakes, some salt and pepper, and the melted butter. Fill the inside of those lil’ boats with this mixture. Brush the rims with the beaten egg, sprinkle with sesame seeds and air-fry for 12 minutes at 190°C.

3. Add the Eggs#

Open the drawer and make a little well in the centre of the filling in each boat, crack an egg into each and air-fry again for a further 6 minutes at the same temperature. Serve hot and enjoy.
